6 pears; peeled, cored, and sliced
½ cup of raisins
¼ cup of onion, peeled and chopped
½ cup of cider vinegar
¾ cup of loosely-packed light brown sugar
1 tablespoon of garlic, chopped
½ teaspoon of cayenne pepper
¼ cup of sweet red pepper, chopped
½ teaspoon of salt
3 tablespoons of fresh ginger, peeled and chopped
Cook the ingredients.
Bring the vinegar and sugar to the boil in a saucepan. Add all the ingredients except the pears and simmer over a low heat for 5 minutes. Add the pears and simmer for another 5 minutes and then remove from the heat.
Let the chutney cool for 15 – 20 minutes and then transfer it into a container. It can be refrigerated for up to 2 weeks.
