4 ripe pears
2 ¼ cups water
2 ½ cups sugar
1 cup chocolate sauce
1 teaspoon pure vanilla extract
¼ cup toasted slivered almonds
4 scoops vanilla ice cream
Prepare the pears.
Peel the pears and remove the cores and stems. Cut the pears in half and remove the centre core. Cut away the bottom centre line from the core to the stem.
Make the syrup.
In a large saucepan, bring the sugar and water to the boil. Reduce the heat and allow to simmer for 5 minutes. Add the pears and the vanilla and let this simmer for 15 minutes uncovered until the pears are tender. Remove from the heat and let the pears cool while still submersed in the syrup.
Place a scoop of ice cream into the pear and drizzle over the sauce. Top this with the almonds and serve.
