6 ripe pears
6 oz semisweet baking chocolate
½ cup sugar
3 cups water
2 tablespoons shortening
1 lemon peel twist
Prepare the pears.
Pare the pears and trim them slightly on the bottom to level them off. Remove the core from the blossom end making sure to leave the stem intact.
Make the poaching liquid.
Combine the water, sugar and lemon twist in a large saucepan and bring it to the boil. Add the pears to the boiling liquid and reduce the heat. Simmer the pears for 90 minutes turning and basting them occasionally until they are tender. Remove the pears and stand them on a flat dish and let them cool. Once cooled, dry them off with paper towels.
Make the chocolate sauce.
Place the chocolate and shortening into a saucepan and let the chocolate melt over a low heat. Hold each pear by the stem and spoon over the chocolate mixture coating the pears. Stand them in a cool place and let the chocolate set.
