8 ripe pears
350-400g granulated sugar
1 vanilla pod, split
1 bottle red wine
1 cinnamon stick
Make the sauce.
Empty the wine into a large saucepan and add the sugar. Place the saucepan over a low heat and stir letting the sugar dissolve. Add the cloves, cinnamon and vanilla pod which has been split lengthways. Bring this to the simmering point.
Cook the pears.
Peel the pears leaving the stalks intact. Place the pears in the simmering wine and cover the pan with a circle of greaseproof paper and cover this with a heat proof plate.
Allow the wine to simmer for 10 – 15 minutes until the fruit is soft then remove from the pan from the heat and allow the pears to cool in the wine. Remove the pears carefully from the wine and place them in a serving dish.
Reduce the wine.
Return the wine to the stove and reduce it by a third.
Pour the wine over the pears and serve them hot with rice pudding or cold with ice-cream.
