1 large sweet and crisp apple, chopped
3 cups baby spinach
2 medium steamed beets, peeled and chopped
2 small pears, chopped
½ cup champagne vinaigrette
1 large tomato, cubed
½ orange bell pepper, seeded and chopped
3/4 cup crumbled blue cheese
Prepare the salad.
Toss together the tomatoes, bell peppers, beets, apples, pears and vinaigrette in a large bowl.
Prepare the plates.
Divide the spinach between 4 salad plates and add the salad to each plate. Sprinkle over the crumbled blue cheese and serve.
