3 ripe pears
6oz stilton cheese, rind removed and finely grated
1 tablespoon dry white wine
8oz cream cheese
Juice of 1 lemon
Salt and freshly ground black pepper
Make the pate.
Place the cream cheese in a large bowl and add the wine, nutmeg, salt and pepper. Beat all the ingredients together well.
Shape the pate.
Add the Stilton cheese and roll the ingredients together to form the shape of a roll. Wrap this in Clingfilm and place in the refrigerator to chill for 2 hours.
Slice the pears and dip the slices into the lemon juice. Arrange the pear slices on a plate with the pate in the middle of the plate. Use the walnuts and the watercress to garnish and serve with your favorite crackers.
