1 large can pear halves in syrup
1 cup light brown sugar, packed
1 cup quick cooking oats
½ cup granulated sugar
½ cup butter
1½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon vanilla extract
3 tablespoons melted butter
¼ cup light brown sugar, packed
¼ teaspoon nutmeg
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ teaspoon salt
Prepare the oats.
Drain the pears and reserve 1¼ cups of the syrup. Place the oats in a large bowl and heat the pear syrup to boiling point. Pour the hot syrup over the oats and let them stand for 20 minutes.
Make the cake mix.
Cream ½ cup butter, 1 cup brown sugar and the granulated sugar together until light and fluffy. Blend in the eggs one at a time and then add the vanilla. Sift in the flour, baking sods, salt, cinnamon and nutmeg and mix together until creamy. Add the creamed mixture to the oats and blend well.
Pour the batter into a greased and floured square baking pan and bake for 35 – 40 minutes at 350 degrees. Remove from the oven.
Make the sauce.
Mix together 3 tablespoons of melted butter with ¼ cup brown sugar and the ¼ teaspoon nutmeg.
Cut the pears lengthwise into wedges, place these wedges on top of the cake and spread the sauce over the pears. Place the cake under the grill for 2 minutes until the pears are hot and glazed. Serve with ice cream.
