Pear and Date Salad Recipe

A delicious pear starter and is great for lunch

This is a simple recipe that can be used as a first course or a light lunch.


2 ripe pears
45g walnuts, chopped
80g dates, chopped
1 small crisp lettuce, washed
Mayonnaise or French dressing
Chopped parsley
Lemon juice

Recipe Instructions

Prepare the pears.
Peel the pears and cut them in half. Use a sharp spoon and take out the core and then scoop out a little of the flesh to make a cavity. Sprinkle these with a little lemon juice to stop them from browning.

Make the date and nut mixture.
Chop up the flesh of the pears and add the dates, walnuts, parsley and a little of the lettuce. Mix this all together. Add in some mayonnaise to your liking.

Fill the pears.
Arrange the crisp lettuce leaves on 4 plates and put the pears on top of the lettuce with the hollowed side up. Fill the cavities of the pears with a little of the pear and date mixture and garnish with a sprig of parsley.
