Lamb Chops and Pear Sauce Recipe

A perfect fruity sauce for the perfect dish

This recipe also works well with diced lamb and skewered vegetables.


Rack of lamb or loin chops
2 pears, cored and diced
½ onion, minced
3 kiwis, peeled and diced
3 tablespoons dried cranberries or cherries
3 tablespoons honey
2 tablespoons cognac or brandy
3 garlic cloves, minced
2 tablespoons soy sauce
Juice of one lemon
2 tablespoons chopped fresh mint or basil, optional

Recipe Instructions

Make the marinade.
Whisk together the honey, soy sauce, cognac, garlic and coriander in a baking dish. Place the lamb into the baking dish and turn the meat over to coat. Cover the baking dish and place in the refrigerator overnight.

Make the salsa.
Stir together the remaining salsa ingredients and let it stand for 30 minutes.

Cook the lamb.
Season the lamb with salt and pepper and then cook under the grill or barbeque. Serve over basmati rice topped with the salsa.
