4 large ripe pears
200g black chocolate
2 tablespoons sour cream
8 vanilla ice cream balls
Prepare the pears.
Peel the pears and cut them in half. Rub them with the lemon and then core them with a pointed knife. Bring the water, sugar, and remaining lemon juice to the boil in a heave saucepan and then leave to simmer for 3 minutes. Place the pears in the liquid and let them poach covered for 5 minutes until they are tender. Turn the pears once or twice while poaching. Remove from the heat and strain; keep the juice aside for later use.
Make the chocolate sauce.
Chop the chocolate into small pieces and melt them in a heavy saucepan with 4 spoons of the pear juice. Make sure the chocolate does not stick to the bottom of the pan by stirring continuously while melting over a low heat. Remove from the heat and stir in the sour cream.
Place 2 pear halves on each pudding plate. As soon as the chocolate sauce is ready, place 2 balls of vanilla ice cream on each pear and pour over the chocolate sauce.
