4 rashers streaky bacon
½ pear, cored and thinly sliced
1 tablespoon olive oil
4 tablespoons fresh chives, chopped
4 tablespoons fresh dill, chopped
4 tablespoons fresh chervil, chopped
4 tablespoons fresh parsley, chopped
For the dressing:
1 teaspoon Dijon mustard
3 tablespoons olive oil
1 tablespoon white wine vinegar
30g Stilton, crumbled
1 tablespoon fresh parsley, chopped
Salt and freshly ground black pepper
Cook the bacon.
Heat the olive oil in a frying pan and fry the bacon until crisp and golden.
Make the dressing.
Whisk together the vinegar, mustard, olive oil, parsley, cheese and seasoning in a large bowl.
Make the salad.
Toss together the pear slices and fresh herbs. Add the cooked bacon and mix together well. Drizzle over the salad dressing.
