1 pear, peeled and cored
4 plums, halved and stoned
1 apple, peeled and cored
180g caster sugar
3 eggs, beaten
180g butter
180g icing sugar
180g self-raising flour
2 teaspoons ground cinnamon
1 teaspoon ground cinnamon
Water to mix

Recipe Instructions

Preheat the oven to 180C.

Prepare the fruit.
Cut all the fruit into 1cm pieces and set aside.

Make the batter.
Cream together the butter and the sugar until it is light and fluffy. Beat the eggs and add the eggs a little at a time to the butter mixture. Once done, fold in the flour, the cinnamon and the fruit.

Bake the cake.
Grease a 20cm round cake tin and pour in the mixture. Place this in the oven and bake for 1 hour until the cake is firm to the touch. Let the cake cool in the tin for 10 minutes and then turn it out onto a wire rack to cool completely.

Make the cinnamon icing.
Mix together the icing sugar and the cinnamon then add enough water to make it into a spreading consistency. Spread the icing over the cake and store it in an air-tight tin until you are ready to serve it.
